Boneless Chicken Recipes: Skinny Chicken Parmesan
One of my favorite boneless chicken recipes is Chicken Parmesan, but since I am growing older and stouter I have had to cut this particular jewel out of my diet, but I missed it so much I was determined to find a way to enjoy it guilt-free and I did, the following is my version of Skinny Chicken Parmesan: 4 boneless, skinless chicken breasts 26-oz can spaghetti sauce 1 TBLS dried, minced onion 1 TBLS dried oregano flakes 1/2 tsp garlic powder Salt & Pepper 1 TBLS olive oil 1/2 cup grated parmesan 4 oz low-fat part-skim mozzarella cheese, shredded Preheat oven to 350*F. Grease an 8′x8′ square glass baking dish with olive oil. Rinse chicken, pat dry and place in greased dish. Pour the spaghetti sauce over chicken sprinkle with onions, oregano, garlic, salt and pepper. Sprinkle with parmesan and cover dish tightly with tinfoil. Place dish in oven and let bake for 35-45 minutes or until chicken tests done with a meat thermometer. Remove chicken from oven and pile on the mozzarella and return dish, uncovered to oven until the mozzarella is golden and bubbly. Let stand while tossing the salad and serve.
